Snowman Bliss Balls
Bliss balls are a perfect vegan, healthy snack to take to any festive activity during the Christmas period as they are easy to make, easy to keep in your bag and keep you full of energy all day! When made into little snowmen like these, they are perfect for any vegan friends you are wanting to give gifts to as you can just wrap them up in a christmas themed box and you're good to go!
SNOWMAN BLISS BALLS
This recipe is so quick and so easy to make and requires no baking! All you need is a food processor and a freezer, and in just over an hour these little treats are ready to eat! If you fancy making these, please tag me on instagram on @positivesoph and let me see all your creations!
Yields 6-8 Snowmen
Ingredients
1 cup pitted medjool dates
1/2 cup cashews
1/2 cup flaked almonds
1/3 cup cacao powder
1/3 cup coconut oil
1/3 cup shredded coconut
1 tbsp chia seeds + 2 tbsp water
To decorate:
dried apricot pieces
cacao nibs
black writing icing (vegan)

1. Mix together your chia seeds and water and place into the fridge to form a gel
2. If not already pitted, pit your medjool dates before placing them into your food processor, alongside the other ingredients (in the order listed)
3. Set your food processor to the highest setting and pulse for 5 second intervals, before continuously blending until the mixture forms a ball
4. Remove the mixture from the food processor and mould into balls, with half the mixture being slightly smaller balls than the other half (to form the head and bodies of the snowmen)
5. Once shaped, roll the bliss balls in the remaining shredded coconut to cover
6. Place the bliss balls onto a plate (covered in greaseproof paper) and place into the freezer for minimum of an hour
7. Once removed from the freezer, place a smaller bliss ball on top of a larger one and secure by placing a cocktail stick through the middle of them (you may have to trim your cocktail stick first)
8. Once secured into a snowman shape, place a piece of dried apricot onto a small piece of cocktail stick and push into the head of the snowman for the nose
9. For the eyes, use cacao nibs and simply place them into the smaller bliss ball, and for the mouth use vegan writing icing to ice a mouth onto the snowman's head
10. Once put together, you can enjoy straight away or wrap up these cuties for gifts! If keeping for later, store these bliss balls in an airtight container for up to a week!
