Quick Vegan Vegetable Pasta Recipe

Recently a lot of people I have been asking me for some quick and easy lunch / dinner recipes that are vegan, and so far all I have really posted is breakfast recipes so I thought I would post this really quick and easy vegetable pasta recipe along with a recipe for garlic bread thats perfect for any summer meal! This recipe is 100% vegan, takes about 40 minutes to create including cooking time and the pasta sauce is cooked all in one pan, so it's super simple, quick and easy!



This is a base recipe for a vegetable pasta sauce so feel free to add other veggies such as mushrooms, aubergine, butternut squash or courgette, also feel free to top with vegan cheese or fresh basil. For more of a spicy sauce you could add chilli and other spices and instead of pasta this sauce also works well with rice or grains such as quinoa, bulgar wheat or freekeh. Also feel free to add more garlic and herbs if you prefer a stronger tasting sauce, as always my recipes are adaptable and should be used creatively! 

QUICK VEGAN VEGETABLE PASTA RECIPE

Yields 2-3 portions 

Ingredients

3 small carrots 
1 red onion
2 cloves garlic 
1 can kidney beans
1 can chopped tomatoes 
2 tbsp olive oil
dried basil 
150g dried wholewheat fusilli 


1. Peel and dice the carrots and red onion and cut up the garlic into small pieces 

2. Preheat the olive oil in a large saucepan over a medium heat and in a separate large saucepan boil water for the pasta 

3. Once heated, lightly fry the garlic and red onion in the olive oil for around 10 minutes, until the onion starts to turn translucent ( make sure the onion DOES NOT brown )


4. Then add the carrots, kidney beans and chopped tomatoes into the saucepan along with the dried basil and salt and pepper to taste, mix and leave to simmer for 20 minutes 

5. Add the pasta to the boiled water and turn the heat down to simmer for 20 minutes

6. For the Garlic Bread, combine vegan butter, diced fresh parsley and garlic and mix until smooth 

7. Cut one large ciabatta lengthways and spread the garlic butter mixture, then about 5 minutes before the pasta and sauce is ready place the ciabatta under the grill on a medium heat

8. Once cooked, drain the pasta and serve with toasted garlic ciabatta
